DaySpring is a Grisette made with local wheat from DaySpring Farms located in Danielsville, GA. The dry, grassy, herbal, and slightly fruity beer represents our vision of historical brewing from Belgium while showcasing the beautiful organic raw wheat from DaySpring Farms. This simple and classic approach to a Grisette is the heart of our philosophy for our mixed fermentation program. Our partnership with DaySpring Farms and the Brett family began in 2015 when we sourced their wheat for our first batch of DaySpring. Since then, we’ve become good friends and use their grains in nearly all of our wood cellar and mixed fermentation beers. We are always grateful for the opportunity to work with local farms and feel that the crops give our beers a true sense of place.
