Eukaryote is a dry-hopped, mixed-culture Table Saison (4.2%) featuring DaySpring wheat, Saaz and Hallertau Mittelfrüh hops, and dry-hopped with New Zealand Rakau. Aptly named, this beer celebrates eukaryotes. Eukaryote is a very classic approach to historical Saison with a simple grain bill using DaySpring Farms wheat. It’s highly hopped with European hops and our slight twist to the historical style uses New Zealand hops in the dry hop.
