My Very Own Mole (pronounced mo-leh) is a barrel-aged Imperial Stout made with chilis, cocoa nibs, cinnamon, pecans, vanilla beans, benne seeds, and hoja santa.
Drawing inspiration from the traditional dish native to Mexico, My Very Own Mole seeks to honor our region's land, people, and culinary-influenced ingredients. To honor the way a traditional mole is prepared, we focused on sourcing our ingredients locally. The pecans are from Pearson Farms, benne seed from Anson Mills, peppers from Sundance Farm, the hoja santa from The Feral Woman's Garden, and the cocoa nibs are from Condor Chocolates.
