Let us introduce you to our beers!

We’ve been quiet lately around these parts but don’t worry, it’s for good reason: we started brewing! Last week we began our journey and brewed all four of our year-round offerings. If you’ve been around downtown Athens, you may have smelled our efforts and hopefully they smelled delicious. There’s been lots of questions about what beers we’ll be making and what they’ll be called. Well, take a seat friends because for the first time ever, we give you the Creature Comforts year-round lineup:

The Year-Round Beers

BIBO

Bibo [Pilsner] – Bibo (pronounced bēbō) is a true pilsner with ingredients from five different countries that has a pronounced continental hop flavor and aroma in an incredibly well-balanced package. We use an enormous amount of the classic Czech Saaz and a touch of Motueka hops from New Zealand to put a new world twist on this beautiful old world style. Motueka offers a subtle pineapple note that underlies a harmony of the traditional black pepper, herbal, and cracker grain character pilsners are famous for. Bibo is dry, quenching, and frankly amazingly delicious. 5.5% ABV.

Tropicália

Tropicália [American IPA] – A balanced, soft, and juicy IPA. Ripe passion fruit and citrus hop aroma lead to a full, fruit-forward hop flavor that washes over the palate, ending with subtle bitterness. Some folks say they don’t like hoppy beers, and to that we say that hops do not equal bitterness. To us, hops offer a plethora of flavors, not just bitterness; and in Tropicália it’s a beautiful, luscious, fruit journey for your palate to enjoy without fatigue. 6.5% ABV

Reclaimed Rye

Reclaimed Rye [Rye Amber aged on French Oak] – A uniquely complex and flavorful amber ale. French oak and rye malt lend to a well-rounded body with delicate undertones of toasted bread, spice, and subtle vanilla. We set out to show a new light onto the amber style with this beer, and to reclaim it back from the ordinary. Easy to drink with friends at the pub, or just as good as a companion contemplating the stars, Reclaimed Rye is a collection of familiar voices singing a new harmony. 5.5% ABV.

Athena 

Athena [Berliner Weisse] – A refreshing, gently tart, German-style wheat beer. Our take on the classic Berliner has a blend of citric and fruit notes with nods to cider and sauvignon blanc. We go through two fermentations with this beer to offer an interesting complexity in an amazingly light and drinkable beer. Athena is a tribute to our home that shares a name with the greek embodiment of wisdom and curiosity. Given our affinity to the peculiar and curious, we think Athena is a perfect ambassador for the Classic City. 4.5% ABV.

 

There ya have it! We’ve been working on these recipes for almost two years now, tweaking them to be just the way we like them. It will be our distinct pleasure to serve our community in just a few weeks. We’ll be serving beers at Classic City Brewfest for the first time and then our beers will be hitting the market the week of Twilight Criterium.
